Torrijas Recipe

Crisp and golden outside, soft inside, and packed with flavour, Torrijas is a family-favourite dish similar to French toast but lighter and creamier. It’s often served cold at breakfast in Spain – preferably with a cup of coffee!

How to make

  1. In a wide bowl, beat the eggs with the milk, cream, and sugar until smooth.
  2. Cut each slice of bread in half. Dip the first slice into the egg mixture and make sure both sides are completely coated.
  3. Soak each half of bread in the egg mix for around 8 to 10 minutes. Remember to carefully turn them over every few minutes to prevent them from getting too soggy!
  4. Heat the olive oil in a large frying pan on medium-high heat. Once it’s hot, add the bread to the pan and cook for three minutes on each side until it’s golden brown with crispy edges.
  5. Remove the bread from the pan and transfer to a low oven to keep warm as you cook the rest.
  6. Split the torrijas into portions and dust with a sprinkling of cinnamon. Serve with Greek yoghurt on the side.
