How to make

  1. Melt the butter in a large pan over medium-high heat.
  2. Once the butter is melted, crack the eggs into the pan. Turn the heat down as low as possible and leave the eggs to cook until the whites begin to solidify.
  3. Just before the egg whites are cooked, place a slice of cheese over each egg. Continue to cook until the cheese has melted.
  4. As the cheese is melting, toast the bread.
  5. Once the cheese has melted and the egg whites have cooked but the yolk is still runny, transfer each egg onto a toasted slice of bread.
  6. Season the eggs with salt and pepper.
  7. Spread ketchup and mayonnaise across the remaining slices of toasted bread and place these slices on top of the egg to make four fried egg sandwiches.
  8. Serve warm. Preferably with a lovely brew!
