Apfelpfannkuchen (Fluffy German Apple Pancakes)

Deliciously sweet and doughy, Apfelpfannkuchen (fluffy German apple pancakes) is a light and eggy breakfast treat. This oh-so-tasty dish is made using milk, eggs, water, and flour, topped with sweet, caramelised apples, and served with a sprinkling of sugar. Guten appetit!

How to make

  1. Crack each egg and separate the egg yolks from the egg whites.
  2. In a bowl, mix the egg yolks, milk, sugar, water, baking powder, and salt to create a batter with a thick, runny consistency.
  3. Use a handheld mixer to whip the egg yolks into soft peaks, before folding them into the batter mix.
  4. Heat the vegetable oil in a small cast iron pan over medium heat. Once it’s hot, pour half of the batter into the pan. There should be enough to create a thick layer.
  5. Add the sliced apples on top of the batter and let cook for around two minutes.
  6. Use a spatula to gently lift the set batter to check firmness – like you would a normal pancake!
  7. Flip over.
  8. Repeat the steps with the second pancake.
  9. Place both pancakes onto a warm plate, allow them to cool and then sprinkle with sugar on top.
