What you'll need

  • 1 small garlic clove
  • ½ avocado
  • A pinch salt
  • Crushed black pepper for seasoning
  • 10 mint leaves
  • 250g broad beans
  • The juice of half a small lemon

How to make

  1. Boil the broad beans on a medium heat for a couple of minutes until they cook all the way through.
  2. For a smooth and bright dip, remove the shells of the beans, then place them in a food processor.
  3. Add in the avocado, garlic, lemon juice, salt and mint, then blitz until the mixture reaches the consistency you prefer it.
  4. Add to your serving bowl straight away and stir in a good helping of crushed pepper.
  5. For a little added flavour and bite, drizzle with a little olive oil and top with sesame seeds, a dash of your favourite spices and some extra mint, then tuck in with your favourite crispbreads. We recommend Peter’s Yard!
