Easy Bake Flapjacks

This easy-bake flapjack recipe is the perfect way to stay occupied while using up some ordinary pantry ingredients and turning them into something sweet and indulgent. It's also amazingly versatile – you can swap the porridge oats for almost any oat-based granola of your choice, switch syrup for honey, and add in a handful of your favourite dried fruit, nuts or chocolate chips.

What you'll need

  • 80g milk chocolate
  • 170g Netherend Farm Organic Unsalted Butter
  • 1 tbsp vanilla extract
  • 350g oats or your favourite oat-based granola
  • 170g golden syrup or Thursday Cottage Acacia Honey
  • Optional - a handful nuts, chocolate chips and dried fruit of your choice

How to make

  1. Preheat the oven to 150C/ Gas mark 2.
  2. Line a medium-sized baking tin with baking paper, using a little of the butter to grease.
  3. Melt the remaining butter in a large pan on a medium heat.
  4. Once melted, stir in the golden syrup or honey, along with the chocolate, vanilla extract and light brown sugar.
  5. Once the sugar is dissolved and the mixture is smooth, remove the pan from the heat, and fold in the oats or granola until everything is fully combined.
  6. If desired, add in a handful of nuts, chocolate chips or dried fruit to the mixture and stir.
  7. Pour the mixture into the lined baking tin and smooth the top with the back of a spoon.
  8. Bake in the oven for 30-40 minutes.
  9. Once baked, leave to cool for 10 minutes before cutting up and serving.
