Gut-Friendly Kefir Brownie Muffins

How to make

  1. Pre-heat the oven to 200°C or 180°C fan.
  2. Combine the butter, oil and sugar, and mix until it forms a creamy consistency.
  3. Add in the egg and kefir and mix well.
  4. Sift in the flour, baking soda and cocoa powder.
  5. Mix until just incorporated (lumps are fine).
  6. Pour in the chocolate chunks and sea salt and mix slightly.
  7. Place into lined muffin tins.
  8. Bake for 17-20 minutes.
