Stuffed Picnic Loaf

The best trick for a plastic-free picnic is to create one big, impressive piece to serve up. That’s why we’ve come up with a traditional Ploughman’s stuffed loaf that you can simply bundle into your picnic bag, then slice and enjoy without worrying about any waste. This loaf will not only feed a whole family, but can be created almost any way you like, whether toasty warm or straight out the hamper - mix and match ingredients to suit your taste, choosing from our fantastic range of cheese, bacon and veggies. It’s an easy recipe that’s sure to impress better than any store-bought sandwiches.

What you'll need

  • Netherend Farm Organic Unsalted Butter
  • 4 rashers bacon
  • 1 avocado, thinly sliced
  • 1 loaf of your favourite bread
  • 8 cherry tomatoes, halved, or 2 large tomatoes, sliced
  • 4 slices Godminster cheese
  • 4 tbsps Rubies in the Rubble Tomato Chutney
  • 1 white onion
  • A handful of leafy salad
  • 1 apple, thinly sliced

How to make

  1. Start by grilling or frying the bacon and onion slices.
  2. Slice the top 3cm of the loaf off, removing it in one piece to replace later.
  3. Using a knife, hollow out the loaf, leaving around 1cm from the crust.
  4. Spread your chosen butter all around the inside of the loaf.
  5. Layer up the loaf with the cheese slices, then bacon, chutney, apple, and avocado.
  6. Next, add a layer of salad and tomato slices, then top with the onion.
  7. Simply replace the top of the loaf, wrap it tightly and chill in the fridge until you take it on your picnic.
  8. To serve, unwrap and cut into thick wedges.
