Mini Cheesy Open Sandwiches

A much more exiting way to enjoy a sandwich, these tasty savoury snacks are quick and easy to make with just a few simple ingredients and a muffin tray.

What you'll need

  • 30g butter
  • 1tsp Dijon mustard
  • 3-4 slices ham
  • 15g flour
  • 6 small eggs
  • 200ml milk
  • 6 slices white bread
  • 100g cheddar cheese, grated
  • A pinch nutmeg

How to make

  1. Start by making a simple bechamel sauce. In a saucepan, melt 15g of the butter and whisk in the flour until smooth.
  2. Slowly pour in the milk, followed by the nutmeg and mustard, continuing to whisk until smooth. Take off the heat and set aside.
  3. In a separate pan, melt the remaining butter.
  4. Using a rolling pin, flatten the sliced bread and coat both sides in the melted butter, before cutting them and fitting them into each slot of the muffin tray.
  5. Layer up some ham into the bottom of each open sandwich.
  6. Crack an egg over each of the sandwiches. If the eggs are too big, make sure to drain out some of the egg white first.
  7. Pour the bechamel sauce evenly over each one, then top them off with as much cheese as you like.
  8. Bake in the oven for 15 to 20 minutes at 180 degrees.
  9. Top with a sprinkling of chopped chives and enjoy them right away!
