Spinach, Tomato and Feta Egg Muffins Recipe

What you'll need

  • 8 eggs
  • 150g spring onions
  • 30g chopped spinach
  • 75g feta cheese
  • 100ml milk or milk alternative (unsweetened)
  • 25g cheddar cheese, grated
  • Salt and pepper to taste
  • 100g cherry tomatoes, diced

How to make

  1. Preheat your oven to 190 degrees (170 degrees for fan).
  2. Line a muffin tin with non-stick muffin liners (spray liners with vegetable oil spray if they’re non-stick liners).
  3. Chop leeks, spinach and tomatoes.
  4. In a large bowl, whisk the eggs and milk together.
  5. Stir in the veggies, cheese, and salt and pepper.
  6. Divide the mixture between the trays and bake in the oven for 20 minutes or until a toothpick comes out clean when inserted in the middle of a muffin.
