Red Leicester and Caramelised Onion Sarnies

With all the satisfaction of a fry-up but half the effort, a sarnie of fried onion topped with a good helping of rich melted Red Leicester is sure to beat any hunger pangs and keep you powered up for the afternoon. Why not add a rasher of bacon to really treat yourself?

What you'll need

  • 2 slices of Belton Farm Organic Red Leicester
  • A small helping of butter
  • 2 slices of white bread
  • Half a small onion, thinly sliced
  • 1 rasher of bacon (optional)

How to make

  1. Heat your pan on the stove with a little butter until it melts.
  2. If you’re using bacon, fry in the pan on a medium heat for a minute on each side.
  3. Add the onion slices, and lightly fry them for about a minute.
  4. Butter your bread and build up your sandwich with the bacon and onion, before topping with the Red Leicester cheese.
  5. Grill the sandwich for 2 to 3 minutes until the cheese melts and the sandwich is toasty warm.
