How to make

  1. Half-fill a large pan with salted water and a drop of white wine vinegar. As the water begins to boil, bring it to a light simmer over a medium heat.
  2. Crack your egg into a ramekin.
  3. Gently swirl the water then slowly slide the egg into the pan, making sure the heat is low enough to keep the egg stable.
  4. Cook each egg for around 3 minutes.
  5. While the eggs are cooking, toast the bread and scoop out the flesh from the avocado and mash with the lime juice and salt.
  6. Remove the eggs from the water using a slotted spoon and place onto kitchen paper or a tea towel to get rid of excess water.
  7. Spread the toast with the smashed avocado, and then place the poached eggs on top.
  8. Season with salt and pepper and serve with fresh herbs and organic cherry vine tomatoes.
