Cloud Eggs Recipe

Light as air yet satisfyingly filling, these cloud eggs make the best breakfast or brunch dish! Not only are they irresistibly tasty, they’re also fun to make and destined to be the envy of your Instagram followers. A fluffy, pillowy texture and glossy runny yolk create a delightfully delicious flavour and picture-perfect finish!

How to make

  1. Pre-heat the oven to 160°C.
  2. Separate your yolks and whites into separate bowls.
  3. Whisk the egg whites until you reach stiff peaks.
  4. Sprinkle in the chives and fold in carefully until incorporated.
  5. Place the whipped whites onto a lined baking tray to form mounds and create a well in the centre for the egg yolk.
  6. Carefully place the egg yolk into the well and season with salt and pepper over the top.
  7. Bake for 15 minutes on 160°C or longer depending how runny you’d like your egg.
  8. Top with chilli oil and serve with rocket or toasted crispy sourdough!
