    How to make

    1. Combine the dry ingredients by sifting together the self-raising flour and baking powder into a bowl using a sieve, followed by the sugar and salt.
    2. Next, grab another bowl and whisk together the eggs and milk, followed by the melted butter and vanilla extract (if using).
    3. Make a well in the middle of the dry ingredients and gradually add your egg, milk and butter mixture, gently folding it in to avoid knocking the air out. This will help keep your pancakes light and fluffy.
    4. Next, heat your frying pan or pancake pan on medium-low heat and melt a small knob of butter (or cooking spray) to coat the pan.
    5. Once heated, spoon 2-3 tablespoons of batter to your pan and cook for 2-3 minutes until you see bubbles forming on the surface.
    6. Now for the fun part! Flip the pancake (you can use a spatula if you don’t trust yourself) and cook for another 1-2 minutes until golden brown on both sides. Keep the pancake warm by placing it in the oven on a very low temperature whilst you cook the rest of your stack!
    7. Repeat steps 4-6 until you’ve used all of your batter.
    8. Stack your pancakes on top of each other on a plate and add your favorite toppings.
    9. Enjoy!
