Viral Breakfast Tortilla Quiche Bake

Looking for a nourishing high-protein breakfast that's ready in 15 minutes? Look no further than this viral tortilla quiche bake. Super easy to make and seriously delicious, it's also totally customisable to your tastes — mix up the toppings by using whatever you have in the fridge!

What you'll need

  • 1 handful baby spinach
  • Salt & pepper, to taste
  • 1/2 sliced red pepper
  • 1 tbsp grated mozzarella
  • 3 Clarence Court eggs
  • Chives, to serve
  • 1 heaped tbsp cottage cheese
  • 1 tbsp grated Cathedral City cheddar
  • 1 large tortilla or wholemeal wrap
  • 1 chopped spring onion

How to make

  1. Pre-heat the oven to 180°C.
  2. Grease a medium-sized round baking tray or tin with a little depth.
  3. Place the tortilla wrap into the tin and press it in so it takes the shape of the tin.
  4. Crack in the eggs and cottage cheese then mix.
  5. Add the rest of the ingredients and disperse evenly.
  6. Bake in the oven for 15 to 20 minutes or until the quiche is fully cooked and the cheese is crispy.
