Ultimate Breakfast Bagel Recipe

Stuck on what to make for breakfast or brunch? How about just-toasted bagels slathered with a generous helping of ketchup and topped with crispy bacon, cheese, and perfectly cooked fried eggs? What you'll need

  • A handful lamb’s lettuce
  • 2 free-range medium or large eggs
  • Ketchup, for spreading
  • 1 avocado, sliced
  • 2 Warburtons thin bagels
  • 6 rashers streaky bacon, cooked and crispy
  • 6 leaves baby gem lettuce
  • 2 slices Edam cheese
  • 1 large vine tomato, sliced

How to make

  1. Toast your bagels then spread both the top and bottom liberally with ketchup. Place the bottom half of the bagels onto plates.
  2. Place 3 leaves of gem lettuce on each bagel bottom, then in this order build your breakfast bagel: next add 3 rashers of cooked crispy bacon, 1 slice of cheese, 2 slices of tomato and half an avocado (sliced). Stop before adding the lamb's lettuce.
  3. Now it’s time to fry your egg! Over a low-medium heat, add a little olive oil to a non-stick frying pan and then crack your eggs into the pan, leaving good space between each one.
  4. Fry until the whites are cooked, but the yolk is still runny. This may take 5 minutes. Turn the heat off immediately.
  5. Top the bagel with a small handful of lamb's lettuce, then follow with your fried egg and finally finish by placing the other half of the bagel on top. Top tip: to keep the bagel stacked and standing, place a cocktail stick or skewer through the centre.
  6. Squish for an oozy egg yolk and demolish immediately!
