Ultimate Ham, Cheese and Vegetable Omelette Recipe

What you'll need

  • ¼ red bell pepper, sliced
  • 1 chestnut mushroom, chopped
  • 30g baby spinach
  • Salt and black pepper, to season
  • 30g grated cheddar cheese
  • 1 tbsp unsalted butter
  • Sriracha sauce, to taste
  • 2 medium free-range eggs
  • 1 tbsp whole milk
  • 1 thick slice ham, finely chopped or diced

How to make

  1. Carefully crack two eggs into a small bowl and add the milk. Season with a pinch of salt and black pepper, then whisk well until combined and a little foamy.
  2. Heat the butter in an 8-inch non-stick omelette pan or skillet over medium heat, making sure to cover the base and sides.
  3. The moment the butter starts to foam, pour in the egg mixture and cook for 10 seconds or until the bottom of the omelette is lightly set. Using a rubber spatula, make long strokes to push and scrape the cooked eggs off the base. Tilt the pan to move any uncooked eggs. Repeat this step until the eggs have set but the omelette remains soft in the centre.
  4. Add the spinach, mushroom, pepper, ham, and grated cheese into the centre of the omelette and cook until the cheese has melted.
  5. Increase to a high heat and cook the omelette for another 25 seconds, or until the bottom begins to brown.
  6. Fold the omelette in half using a rubber spatula, then remove the pan from the heat and slightly tilt to move the omelette to the edge of the pan.
  7. Slide onto a warm plate and garnish with a generous helping of sriracha sauce!
