Bacon and Egg Breakfast Buns Recipe

A classic combination of bacon and a fried egg sandwiched in a toasted brioche bun makes this breakfast and brunch recipe a solid winner. What you'll need

  • ¼ lemon, sliced into wedges
  • Salt and pepper, to season
  • Splash of olive oil
  • ½ avocado
  • 1 medium or large free-range egg
  • 2 rashers smoked back bacon
  • 1 brioche bun, cut in half

How to make

  1. Preheat your air fryer to 200°C or your grill to medium-high heat.
  2. While the air fryer or grill is heating up, scoop out the insides of the avocado into a small bowl. Squeeze a wedge of lemon over the top, mash thoroughly with a fork and season with salt and pepper.
  3. Place the bacon into the air fryer in a single line and cook for 6 minutes for just-cooked bacon or 9-10 minutes for crispy bacon. Don’t put the bacon in multiple layers or it won’t cook as well. If you’re using the grill, place the rashers in and cook for 4 to 5 minutes on each side.
  4. As the bacon is cooking, let’s fry the egg! Pour a splash of olive oil into a small non-stick frying pan over the lowest heat possible.   5. Once the egg white has solidified, usually after around 5 minutes, slide the egg onto a warm plate.
  6. Lightly toast the brioche bun and then spread the bottom half with the smashed avocado.
  7. Take the bacon out of the air fryer or grill and place it on top of the avocado. Place the fried egg on top of this. Season with salt and pepper and place the other brioche bun half on top.
