They say that breakfast is the most important meal of the day, so why not treat the one you love this Valentine’s Day to the most romantic gesture of all, breakfast in bed? Think heart-shaped eggs, smashed avocado, and perfectly toasted sourdough so tasty, you won’t mind a few crumbs. Possibly the best thing to wake up to, right? Well, we guarantee it’ll be love at first bite.

What you'll need

  • Butter for frying
  • 2 ripe avocados
  • 2 large free-range eggs
  • 2 slices of sourdough bread
  • Salt and pepper for seasoning
  • Heart-shaped cookie cutter
  • 1 lime for juicing

How to make

  1. Begin by cutting the lime into wedges. Mash the ripe avocado in a medium bowl, and sprinkle with a pinch of salt and black pepper. Squeeze the juice of the lime over the top.
  2. Using the heart-shaped cookie cutter, carefully cut out the centre of both slides of sourdough bread.
  3. Heat a dash of butter in a medium-sized frying pan over a medium heat. Once it’s melted, swirl to coat the pan.
  4. Add the first slice of bread to the pan and fry until golden brown on one side. Using a spatula, flip the bread over.
  5. Turn the heat to low and crack an egg into the hole in the bread. Cook for around two minutes, or until the egg is cooked through. You can also flip the bread over to finish cooking the egg on the reverse!
  6. Repeat with the second slice of bread and egg.
  7. Once the egg-filled toast is cooked, serve immediately and enjoy!
