Pan Con Tomate (Spanish Tomato Bread) Recipe

How to make

  1. Place the bread slice on the tray and drizzle with olive oil.
  2. Place under the grill until each side is well toasted/ charred.
  3. While the bread is grilling, grate the tomatoes into a bowl.
  4. Lightly sieve the grated tomatoes until some juice has dropped through.
  5. Add olive oil and salt to the strained tomatoes.
  6. Once the bread has finished grilling, take it out of the oven and brush with a fresh garlic clove.
  7. Spoon over the seasoned tomato mixture, add a sprinkle of parsley and serve.
