Mini Apple Pies

Little pies, big smiles. These mini apple pies are bursting with sweet, spiced apple and wrapped in buttery pastry, making them the perfect treat for cosy afternoons or a simple dessert. Serve warm with a splash of cream or a scoop of ice cream for extra joy in every bite!

How to make

  1. Pre-heat the oven to 180°.
  2. Peel and chop apples into small, diced pieces.
  3. Melt the butter in a pan and add the apples.
  4. Add the brown sugar, lemon, cinnamon and cook down for a bit until the apples have softened slightly.
  5. Mix the cornflour with a few tbsp of water and pour into the apple mixture.
  6. Cook for a few minutes until the sauce thickens and the apples are softened.
  7. Leave to cool.
  8. Cut pastry into rounds and using a knife, cut the rest of the pastry into thin strips for the tops of the pies.
  9. Place one tsp of apple pie filling onto a pastry round and cover with 4 strips of pastry over the top of the filling making sure to pinch/fork down the pastry seams.
  10. Brush over some egg yolk and place onto a baking tray.
  11. Bake for around 12-15 minutes or until golden brown and crispy.
