Japanese-Style Pancake Soufflés

These Japanese-style pancake soufflés make a deliciously different twist on a classic crêpe, perfect for indulgent breakfasts and brunches.

How to make

  1. Add the flour, baking powder and sugar to a large mixing bowl, and give them a quick stir.
  2. Add in the eggs and 1tbsp of the sunflower oil.
  3. Bit by bit, add the milk, then the vanilla extract, while beating the mixture together with a whisk.
  4. Prepare a frying pan with the remaining oil on a low heat, then add in the crumpet rings.
  5. Pour the batter into each crumpet ring to about a height of 3cm.
  6. Cover the pan with a lid, cooking for about 10 minutes until the pancakes take on a golden colour and start to bubble, then flip them over and cook for another 5 minutes before serving.
