Hot Honey-Cured Egg Yolks Recipe

These hot honey-cured egg yolks will have you jumping out of bed in the morning and straight into the kitchen. This easy yet seriously impressive recipe uses hot honey – simmered with chopped chillies – to cure egg yolks. These oh-so-tasty egg yolks are then served atop delicious pan-fried, buttered sourdough bread. We told you they were worth getting up for!

How to make

  1. In a saucepan, on a low heat, heat the honey until it starts to slightly simmer.
  2. Add in the chopped chillies, turn off the heat and leave to infuse for two minutes.
  3. Place the hot honey mix in a sterilised jar to cool.
  4. Meanwhile, separate the yolks from the whites and place the yolks into a container. Avoid overlapping them!
  5. Pour the cooled hot honey over the egg yolks until it covers them.
  6. Cover the egg yolks with a lid and place them in the fridge for 3-5 days until they are cured to your liking.
  7. Once the yolks have cured, serve them smashed onto a piece of pan-fried, buttered sourdough.
