Herb Butter Roast Potatoes

Nothing says cosy season quite like these roasties. Made with organic white potatoes and roasted in a rich, flavourful herb butter, they’re the shining star of every autumnal roast. Crispy on the outside and fluffy on the inside – they’re the ultimate crowd-pleaser!

How to make

  1. Peel and chop your potatoes and place into a saucepan, covering them with cold water.
  2. Place on medium heat and boil for around 12-14 minutes, or until a knife slides into the potato but doesn’t break it.
  3. Drain the water from the potatoes and fluff them up in a colander.
  4. Once the potatoes are covered in a layer of potato fluff, set them on a wire rack and leave to rest for 15 minutes or until no more steam is coming off them.
  5. While waiting for the potatoes to cool down, pour some oil in a metal tray along with the fresh herbs and crushed garlic.
  6. Place in the oven until the oil has infused but the herbs aren’t burnt.
  7. Take the herbs out from the oil and set aside.
  8. Place the potatoes into the hot oil and turn them over slightly so each side of the potato is covered in oil.
  9. Place in the oven for around 45 mins to 1 hour, turning them intermittently for even cooking.
  10. While waiting for the potatoes to roast, make some herb butter by mixing the roasted herbs into the butter along with some sea salt.
  11. Once the potatoes are golden and crispy, cover in the herb butter and serve.
