Garlic Roasted Cherry Tomatoes

In the spirit of ‘growing your own,’ cherry tomatoes are some of the easiest fruits not only to grow, but also to cook into delicious yet easy dishes. Make the most of the fruits of your efforts by whipping up this simple but sweet roasted side dish that can be turned into a rich pasta sauce at almost no extra effort.

What you'll need

  • 280g organic cherry vine tomatoes
  • 10 basil leaves
  • Salt and pepper for seasoning
  • 2 tbsps olive oil
  • 1 tbsp white wine vinegar
  • 4 garlic cloves

How to make

  1. Preheat the oven to 180 degrees.
  2. Cut each cherry tomato in half and place the halves, open side up, in a shallow roasting tin. You can remove the seeds first if you prefer.
  3. Crush the garlic cloves and cut the basil leaves into small pieces, then add them to a small mixing bowl.
  4. Pour the olive oil and white wine vinegar into the mix, and add as much salt and pepper as you like, before stirring everything together.
  5. Spoon the mixture over the tomatoes, and roast in the oven for 20 minutes until they are soft and fragrant.
  6. Once ready, serve as a simple side dish, or roughly chop up to create a delicious pasta sauce.
