French Onion Soup

This classic French onion soup is a comforting, hearty dish that’s full of rich, deep flavours. Made with our organic onions, slowly caramalised to perfection, and a generous helping of our creamy unsalted butter, it’s a simple yet satisfying meal.

How to make

  1. Slice the onions into thin rounds.
  2. In a stainless steel heavy-based saucepan, melt the butter.
  3. Add in the onions with a pinch of sea salt, thyme and bay leaves.
  4. Keep the onions on a low heat mixing every so often so they caramelise evenly.
  5. Once the onions have turned brown and sticky, add the balsamic and mix.
  6. Simmer for a few minutes then add in the beef stock.
  7. Mix again and let simmer for 25 minutes.
  8. Once soup is ready, season with salt and pepper if needed.
  9. Top with a slice of sourdough and Gruyère cheese, then place under the grill until it’s bubbly and toasted.
