Vanilla Yoghurt Cake

A piece of cake to make, this delicious yoghurty loaf uses just seven ingredients that are all measured using only the yoghurt pot. With a light and creamy vanilla yoghurt from Pure Nature, you'll make a naturally-flavoured, moist cake that goes perfectly with a simple serving of cream and blueberries for an easy but impressive dessert.

What you'll need

  • Half a pot coconut oil or mild olive oil
  • 1 pot fresh organic blueberries - optional
  • 2 tsps vanilla essence
  • 1 pot granulated sugar
  • 2 pots self-raising flour
  • 3 large eggs
  • 1 pot Pure Nature Vanilla Organic Vanilla Yoghurt

How to make

  1. Start by greasing a loaf tin with a small amount of butter, then preheat the oven to 180 degrees/ Gas mark 4.
  2. In a large mixing bowl, stir together the yoghurt, sugar, flour and vanilla essence.
  3. Next, add in the oil and eggs, and beat together until the mixture forms a smooth, glossy batter.
  4. Carefully pour the mixture into the loaf tin.
  5. If you're adding blueberries, scatter them across the top of the mixture, and press them down using a teaspoon.
  6. Bake the cake in the oven for 45 minutes to an hour until it turns golden.
