Not only is it aesthetically pleasing but it also provides the perfect balance of carbs from the sourdough, fats from the egg and avocado and protein from the egg, making it perfect for those who prefer to keep their breakfast healthy and balanced - no matter what day of the year it is. 

Although it might be a little fiddly to eat in bed (we’d recommend serving it on a tray), it’ll be well worth the effort.

What You'll Need

  • Butter or spray oil for frying
  • 1 large ripe avocado
  • 2 large free-range eggs
  • 2 slices of sourdough bread
  • Salt and pepper for seasoning
  • Heart-shaped cookie cutter
  • 1 lime for juicing

If you’re not a fan of avocado, you can swap it out for a couple of slices of crispy bacon or smoked salmon. 

Method

1. Begin by mashing the avocado in a medium bowl, then sprinkle with a pinch of salt and black pepper. Squeeze the juice of the lime over the top.

2. Carefully cut out the centre of the bread using a heart-shaped cookie cutter.

3. Heat a dash of butter or spray oil in a frying pan over a medium heat, ensuring it is evenly coated.

4. Add the first slice of bread to the pan and fry until golden brown on one side, then flip and repeat on the other side.

5. Turn the heat to low and crack an egg into the hole in the bread. Cook for around 2 minutes until the egg is cooked through. You can also flip the bread over to finish cooking the egg on the reverse!

6. Repeat with the second slice of bread and egg.

7. Once the egg-filled toast is cooked, serve immediately on a tray and enjoy!

 

Vanilla and Cinnamon French Toast

A sweet breakfast classic, French toast is the ultimate breakfast idea for Valentine’s day. Crispy, buttery and sweet, it is the ideal recipe to get your day off to a tasty start.

What’s great about this recipe is how versatile it is. Cinnamon not to your liking? Swap it out for a sprinkling of nutmeg. Like a sweet and salty combination? Top with a rasher or two of bacon and drizzle with maple syrup. 

The possibilities are (almost) endless. 

What You'll Need

  • 2 large eggs
  • 120ml whole milk
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 4 slices of thick-cut bread
  • 15g butter for frying
  • Maple syrup, icing sugar, or strawberries (to serve)

Method

1. Crack the eggs into a medium-sized bowl and whisk until smooth.

2. Add the milk, cinnamon, vanilla extract and salt and stir until combined.

3. Dip the bread in the egg mixture, ensuring that both sides are equally coated. You want to make sure it is drenched but not soggy - around 30-60 seconds should suffice.

4. Heat a non-stick frying pan or griddle over medium heat and add the butter.

5. Place the soaked bread slices into the hot pan and cook for 2-3 minutes on each side until crispy and golden brown. 

6.Once cooked, remove from the pan and top with a dusting of icing sugar, maple syrup and fresh strawberries. 

 

Heart-Shaped Pancake Recipe 

If you’re looking for a versatile breakfast in bed recipe, then you cannot go wrong with pancakes. 

Whether you top them with berries, yogurt and honey, smother them in melted chocolate or opt for something savoury like bacon and smashed avocado - they’re ideal for couples who have slightly different tastes.

What You'll Need

  • 1 large egg
  • 150g plain flour
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • 1/2 tsp vanilla extract (optional)
  • 120ml milk of your choice
  • 30g melted butter 
  • Pinch of salt
  • Toppings of your choice

Method

1. Mix the flour, baking powder, sugar and salt together in a bowl. 

2. In a separate bowl, beat the egg, then mix in the milk, cooled melted butter and vanilla extract (if using).

3. Gradually add the wet ingredients to the dry, stirring until combined.

4. Heat a non-stick pancake pan (or small frying pan) over a medium heat and add a small knob of butter or spray oil. 

5. Grease a heart-shaped silicone mould and place it in the hot pan, then pour around 3 tablespoons of batter (or enough to fill the mould halfway).

6. Cook for 2-3 minutes or until bubbles appear on the surface and the edges start to set. Carefully remove the mould, then flip the pancake and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter, adding more butter or oil to the pan as needed.

7. Serve the pancakes immediately with your choice of toppings.
