Smashed Avo on Toast with Crispy Harissa Tofu

Breakfast just got a whole lot spicier. This delicious dish is packed full of flavour and has a great kick to it too. Creamy avocado mixed with zesty lime and a pinch of chilli flakes pairs perfectly with the gorgeously crisp harissa tofu. Lots of spice not really your bag? You can reduce the heat by switching chilli flakes for crushed garlic for some added depth of flavour.

What you'll need

  • ½ red chilli, very thinly sliced or 1/2 teaspoon dried chilli flakes
  • 1tbsp harissa paste
  • 2 large or 4 small slices of bread
  • A pinch of salt
  • 2tbsps coriander, finely chopped
  • 1tbsp tomato puree
  • Juice of 1 lime or ½ lemon
  • 2tbsps olive oil
  • 200g extra-firm tofu
  • 1 large, ripe avocado

How to make

  1. Tear the tofu into 1-inch pieces then press between sheets of kitchen paper or cloth to squeeze out the excess water. Sprinkle with salt.
  2. Heat the olive oil in a large frying pan then add the tofu. Leave to crisp up on one side then stir and fry until all sides are crispy and golden.
  3. Stir in the tomato puree, harissa paste and two tablespoons of water to loosen. Cook for a further few minutes until the tofu is coated in the sauce.
  4. Meanwhile, scoop out the flesh from the avocado and mash with the lime juice, salt and chilli. Taste for seasoning and add more salt, lime juice and pepper if needed.
  5. Toast the bread and spread the avocado mixture on each one. Top with the crispy harissa and serve immediately.
