Spicy Mexican Baked Eggs with Avocado

If you need a kick-start to the day, this spicy egg recipe will certainly get you going, and it’s a brilliant way to use up some all-organic fruit and veg.

What you'll need

  • 1 onion, finely sliced (180g)
  • 1 ripe avocado, diced (100g)
  • 1tbsp oil
  • 4 medium eggs
  • 1 red chilli, deseeded and finely chopped
  • 2tbsp roughly chopped coriander
  • 1tsp ground coriander
  • 400g can chopped tomatoes

How to make

  1. Preheat the oven to 200oC, gas mark 6.
  2. Heat the oil in a large ovenproof frying pan and fry the onion and chilli for 4-5 minutes until golden.
  3. Add the ground coriander and cook for a further 1 minute.
  4. Stir in the chopped tomatoes, season and cook for 1-2 minutes.
  5. Make 4 hollows in the tomatoes and crack an egg into each.
  6. Bake for 8-9 minutes until the egg whites have just set.
  7. Sprinkle over the avocado and coriander to serve.
