Halloumi and Roasted Red Pepper Toastie

Adding some roasted pepper to your toastie really gives it some extra bite, and there’s no cheese it goes better with than some easy-grill halloumi. Try adding a drizzle of honey, harissa, chilli sauce or homemade salsa for a simple lunch with a gourmet twist.

What you'll need

  • 1tbsp honey, harissa, chilli sauce or salsa
  • 1 slice of halloumi
  • 1 red bell pepper
  • Black pepper
  • 2 thick slices of sourdough bread
  • Enough butter for spreading

How to make

  1. Roast the pepper for about 20 minutes, by oven or grill.
  2. While the pepper is roasting, grill the halloumi for about a minute on each side until it browns, and butter the bread.
  3. Once the pepper is roasted until lightly charred, peel, deseed and finely slice.
  4. Layer up the sandwich with an added drizzle of honey, harissa or chilli sauce, and a little black pepper.
  5. Return the sandwich to the grill for a couple of minutes until hot and crispy.
