Brown Butter Potato Rostis by All Things Butter

What you'll need

  • 40g salted butter
  • 1 large potato
  • 1tsp baking powder
  • A pinch of salt

How to make

  1. Peel and grate the potato.
  2. Blanch the potato in salted water for one minute, remove and strain until dry.
  3. Add to mixing bowl with teaspoon of baking powder and mix together.
  4. Form your potato into a patty.
  5. Add 40g of organic salted butter to a medium heat pan along with some olive oil.
  6. When foaming, add the patty to the pan and baste until golden brown.
  7. Remove, cut into quarters and serve with a touch of Maldon salt.
