Brie and Truffle Potato Skins With Leftover Roasties

Give your leftover roasties a cheesy second life with this easy bake. A sprinkling of black truffle shavings adds a wonderful twist of festive decadence, and it’s all ready in less than half an hour!

What you'll need

  • 10 leftover roast potatoes
  • Black pepper
  • 20g butter, melted
  • 150g brie, cut into thick slices
  • 1tbsp mixed herbs
  • Truffle shavings

How to make

  1. Heat the oven to 180 degrees (160 degrees fan).
  2. Arrange the leftover roast potatoes on a baking tray.
  3. Lightly drizzle the melted butter over the potatoes, and arrange in between them the wedges of brie.
  4. Roast for 15 minutes until the brie starts to melt.
  5. Remove from the oven, scatter in the truffle shavings and finish with a scattering of black pepper and herbs to serve.
