Bacon and Cheese Potato Wedges

There’s no doubt that these delicious potato wedges mixed with bacon and covered in melting cheese are the stuff of savoury dreams. This simple recipe is a brilliant table sharer that’s sure to go down a treat at dinner parties, get togethers, and family meals. Plus, while best served hot, this dish can also be enjoyed cold too. Why not try serving it up with a fresh salad or delicious roasted veg.

What you'll need

  • 1 pack Maynard's Bacon, smoked or unsmoked
  • 1 pot soured cream
  • 1 tsp smoked paprika
  • Godminster Organic Cheddar
  • A pinch salt and pepper
  • 4 organic potatoes
  • 1 pack chives
  • A splash rapeseed oil, or your preferred cooking oil

How to make

  1. Slice potatoes into chunky wedges and place into and oven proof dish, then dice the bacon and set aside.
  2. Drizzle the potatoes with rapeseed oil, smoked paprika and a pinch of salt and pepper, and bake in the oven at 200oC for 40-45 minutes until golden and cooked through.
  3. Add in the chopped bacon rashers for final 10 minutes of cooking.
  4. Whilst the potatoes are in the oven, put the soured cream in a bowl, chop the chives into 1-2cm pieces and stir into the soured cream.
  5. Once the potatoes and bacon are cooked, grate your preferred amount of cheese over the dish and pop back in oven for 3-5 minutes until cheese has melted.
  6. Serve with soured cream and chives.
