Fried Egg and Bacon Crumpets

How to make

  1. Preheat your air fryer to 200°C or your grill to medium-high heat.
  2. While the air fryer or grill is getting to temperature, add the maple syrup and light brown sugar to bowl and mix. Once mixed, use a brush to lightly glaze the bacon rashers. If you don’t have a brush, you can use a spoon instead! Alternatively, if you don’t like your bacon sweet, you can skip this step.
  3. If you're using an air fryer, place the bacon in a single layer in the base and cook for around 6-10 minutes. 6 minutes will give you just-cooked bacon and 10 minutes will leave you with crispy bacon. If you’re using the grill, grill the rashers for 4-5 minutes on each side.
  4. While the bacon is cooking, melt the butter in a small non-stick frying pan on a low heat. As soon as it starts to bubble, crack the first egg into the pan and leave on a low heat to slowly cook.   5. Once the first egg is cooked, remove it from the pan and set aside on a warm plate. Repeat this step with the second egg.
  6. While the second egg is cooking, toast the crumpets and slather with a generous layer of butter.
  7. Remove the bacon from the air fryer or grill and using tongs, place a rasher on top of each crumpet. Then top with the fried eggs.
