Flourless Sweet Potato and Peanut Butter Brownies

What you'll need

  • 1 banana
  • 2 eggs
  • 400g organic sweet potatoes, diced and cooked
  • 3tbsp honey
  • 100g dark chocolate chips
  • 25g cocoa powder
  • 2tsp baking powder
  • 4tbsp smooth peanut butter (or other nut/ seed butter)
  • 150g organic Medjool dates, chopped and pitted

How to make

  1. Peel and dice the sweet potatoes and boil them until tender (about 15 minutes). Leave to cool.
  2. Put the cooked sweet potato, dates, peanut butter, honey, banana and eggs in a food processor and blend until smooth.
  3. Add the cocoa powder and baking powder and pulse until combined.
  4. Stir in the chocolate chips.
  5. Spoon into a greased 9×9 inch pan and bake at 190 degrees (170 degrees for fan) for 15-20 minutes.
