The Perfect, Most Creamy Rice Pudding

Rediscover the cooks’ secret ingredient of sterilised milk! There’s nothing better than a warm homemade rice pudding and we believe Delamere’s sterilised whole milk in a glass bottle is the perfect ingredient to help make this traditional dish. Delamere’s milk is naturally sweet and has subtle caramelised flavours, perfect when combined with butter, sugar and cream to create a magnificent creamy rice pudding.

What you'll need

  • 500ml Delamere sterilised whole milk
  • 100g pudding rice
  • 20g butter
  • Extra butter for the dish
  • Optional – for a traditional flavour, add in 40g mixed dried fruit or sultanas and replace white sugar with 25g soft brown and 25g castor sugar.
  • 1tsp vanilla extract (optional)
  • 50ml double cream
  • Optional – for a citrus flavour, replace nutmeg with grated lemon and/ or orange zest
  • A pinch of nutmeg
  • 50g granulated sugar

How to make

  1. Heat the oven to 150 degrees (130 degrees fan).
  2. Wash and drain the rice.
  3. Butter a 700ml baking dish, then tip in and mix all the ingredients except milk and nutmeg.
  4. Stir through the milk, then sprinkle nutmeg on top.
  5. Cook for approximately 1 3/4 hrs or until the pudding looks golden brown but still has some liquid in. Try not to overcook it as it will continue to cook once taken out.
  6. Alternatively, place all ingredients in a pan and cook gently for approximately 45 minutes until soft stirring occasionally so it doesn’t stick.
