Pumpkin Chocolate Chip Oat Bars

These temptingly sweet, snackable oat bars are chock full of organic goodness thanks to Rude Health’s smooth and creamy soya drink and porridge oats. With pumpkin, spice and all things nice, they’re plenty of fun to make and bound to go down a storm on an autumn afternoon. What you'll need

  • 1 tsp cinnamon
  • 3 tbsp Rude Health Soya Drink
  • A pinch salt
  • 60g chocolate chips
  • 30g coconut oil or vegan butter, melted
  • 1 tsp baking powder
  • 135g pumpkin puree
  • 125g Rude Health Organic Porridge - Daily Oats
  • 1 tbsp ground chia or flaxseed
  • 50g oat flour
  • ½ tsp mixed spice
  • 60g walnuts, chopped
  • 1 tsp vanilla essence
  • 3 tbsp maple syrup

How to make

  1. Preheat the oven to 180 degrees and line a tin with parchment paper.
  2. Stir together the ground chia seeds and Rude Health Soya Drink and leave for 5 minutes to form a gel.
  3. Add the pumpkin puree, melted coconut oil or vegan butter, maple syrup and vanilla to a bowl and stir well. Next stir in the chia seed gel.
  4. Pour in the oats, oat flour, baking powder, cinnamon, mixed spice and salt and stir to a thick batter. Fold in 50g each of chocolate chips and walnuts.
  5. Pour into the lined dish, smooth over the top and sprinkle the remaining 10g each of chocolate chips and walnuts.
  6. Bake for 20 minutes until firm to the touch and golden.
  7. Allow to cool on a wire rack and then slice into 12 bars. Store in an airtight container.
